Wholesome, natural, seasonal, and local—the food philosophy at Dharana at Shillim is committed and simple. With roots in India’s Vedic philosophy, our menus, a lesson in nutrition, are inspired by modern food research and age-old wellbeing wisdom. Featuring nutritionally balanced dishes rich in vitamins, minerals, and antioxidants, they are designed to nourish and feed your body, mind, and soul. GUIDED BY THE SEASONS
Our chefs passionately embrace an earth-to-table approach, using the best in fresh ingredients as guided by the seasons. High-vibe produce is sourced with integrity from ethical local farms and from our own vegetable gardens, where we hand-grow the likes of sun-ripened cherry tomatoes, radishes, green peas, cucumber, and a host of medicinal healing herbs, including India’s revered Ram Tulsi and Shyam Tulsi.
Slow and mindful cooking techniques help to preserve the natural bursting flavours of the food and ensure every mouthful is deliciously energising.
Four Kingdoms, One Plate:
To ensure complete nourishment and contemporary flavours, we celebrate the earth’s bounty by drawing on the plant kingdom (fruits, vegetables, grains, nuts, seeds, and herbs) as a baseline, whilst also giving a nod to the animal kingdom with the provision of pure protein-packed goodness.
The fungi kingdom, including mushrooms, truffles, and umami flavour, adds depth, complexity, and texture to many of our savoury dishes. Meanwhile, the most innovative kingdom of all, that of bacteria and yeast, transforms raw ingredients into probiotic-rich dishes with living microbes to support good gut health and digestion.

Vyoma is Sanskrit for ‘sky’, and this casual dining spot serves a nature-inspired abundantly nutritious menu that celebrates superfoods, organic ingredients, and seasonal produce, all sourced from local farms and markets.
Freshly-baked bread, healthy sandwiches filled with wholesome ingredients, and delicious wraps sit alongside stonebaked sourdough pizzas and crisp, garden-fresh salads, bursting with colour and flavour. Fruit juices, herbal teas, nutrient-packed smoothies, and protein-based shakes (made to our in-house formulas), hydrate and invigorate.
